It isn't that hard to get them in correctly, and after one or two correct tries it becomes second nature. Unless the dealer pulled someone in off the street, the installation is fine.
Your problem sounds a whole lot like air in the lines, which can come from a leaking master cylinder. Worn seals in the master cylinder are usually felt by the pedal slowly sinking under light pressure, but working fine under heavy pressure. You seem to have the reverse situation - working fine under light pressure but failing to hold heavy pedal pressure.
When the dealer mechanic says "it's fine" I'm thinking the SM just says to him "check the brakes" despite your long involved description of the problem to him, and then the mechanic just checks for worn seals and stopping in a straight line, but doesn't try a screeching halt.
