what happened to you is something that does occur - surprised the shop didn't mention that the slave could fail after putting a new master cylinder in.
And at that mileage most any shops is going to recommend a new clutch - assuming it's original.
On my 9000T I replaced slave and master I think around 200k miles - friction plate still had some lining left but I got a used one less than 50% worn from a saab shop that sold used parts at half the cost of a new one.
but on the 9000 you didn't have to pull the entire motor - just the tranny.
Always try and negotiate - but call around and find a shop that gives you a cheaper rate so you have that to base your negotiation on.
