Modern springs are _very_ highly stressed components. There is little safety margin.
In practice immediate failure may not occurr after spacing a spring, but the spring life will be reduced. Especially if large bumps are encountered normally that would overtravel the spaced spring. If the car never hits a bump it will never overtravel and the car may be fine forever, but for normal usage the spring life will be reduced.
If the spring overtravels enough the coils _will_ contact each other. For most springs there is not much coil to coil gap at normal full compression. The coating may be damaged and corrosion can occurr. Corrosion on the outer surface of a highly stressed torsion member is a bad thing.
Where I work we are very careful to ensure that extremely high quality coatings are used and that the coils _never_ come in contact with each other. We do this because of past failures due to small amounts of corrosion.
Perhaps a person will never have an issue, but I would still not advise spacing the spring and not spacing the jounce bumper. It will increase the likelyhood of failure that _does_ happen in the real world. By trade I design suspensions and am fairly familiar with spring design issues. We have seen many real world broken springs and for that reason I strongly advise against the practice of spacing the spring.
The safer solution would be to replace the spring and any other components that differ in length or design. (jounce bumper/damper)
