From what I understand, a 60-degree V6 is inherently "in balance" and, therefore, can be a very smooth engine. (I'm pretty certain a bad design can still screw it up, though.) The 90-degree V6s that seem fairly common in US cars (they're cheap to develop because they're based on shortened V8 blocks), aren't inherently smooth and usually require crankshaft revisions, hydraulic engine mounts and/or balance shafts to smooth out.
I6s can be very smooth indeed, but they seem to be getting rarer. Some of the BMW and MB I6s are amazingly nice engines. If you want to see a really weird I6 application, look under the hood of an S80, which has the only transverse FWD I6 around. As you point out, underhood packaging considerations make V-engines attractive to FWD and AWD car makers. (There's also that strange VW-Audi sort-of V6, which is very compact.)
