I've been doing some research on this so I can share what I know.
You can find information for dealers at:

The voice activated system is new to the market and not available at most dealers yet. The non-voice system is available. Market price for the system is approximately $200. The voice system is about $260. You have to buy the basic unit, plus a pocket for your phone. I have found one dealer that seems to know the product well and has in stock. If you want the info, let me know. I haven't seen much in terms of how either product performs, other than what you see on this or Audi boards.

If you want to intergrate into the stereo (speakers, auto mute) and mic installed in your car, then you can't use the Saab Cell Phone harness. In the 2001's with Onstar, the plug has been replaced with a different plug and is already attached to the Onstar system. Most recommend not using the Onstar mic, but the one with your kit.

A company called Uhltronics http://www.uhltronics.com/products.html makes a product specifically designed to support the saab radio and Onstar system, allowing it to connect into the radio functions.

There are lots of postings on this site regading an issue with alternator whine, but it seems isolated, and there is no a fix from Uhltronics available.

For mounting, you can use the saab "egg" or also there is an elegant solution made by Panvise.

I am getting all the parts together now, and will install soon. While it seems complex, access to the wires, and running the mic, etc. seem very straightforward if you have some experience with this type of work.

I know there are other postings that talk about different mics, how to install, take apart the dash, pillars, etc.
