The best thing to do is start it and try to drive it a little once every week or two. The thing that sucks the most is that the pads often rust right to the rotor when you don't drive the car in the winter, which leaves you with trashed rotors which pulsate like crazy. Winter isn't that long, other than taking it for short drives around the neighborhood, it should be fine.
