Well, in stock form, your car has 160 horsepower at the crank. For a 3000-pound car, that ain't a whole lot. However, it's also got 188 ft-lb *torque*, which is what feels so gratifying on the highway :-).
As for off-the-line performance, in addition to suffering from porky-itis, Saab geared the turbo cars' 1st & 2nd low, probably to limit torque through the under-engineered gearbox (change your gear oil every 6 months). They are so low that you cannot generate max boost in them (well, you can, but at your clutch's expense); neither can you get to 60 without a shift to 3rd (car makers deliberately gear their cars to do well in the 0-60 for marketing purposes).
You're right, though, about having an old car perform so admirably and while being exceedingly practical: the 900 hatchback is one helluva car.
As for what a "slightly modified" car can do, my '89 900T w/160k miles made 160 hp/213 ft-lb at the wheel on a dyno. It ran lean and probably needs a new air mass meter, so perhaps there's more. Regardless, the cost to get it there was around *$20*. Depending on whose drivetrain loss estimate you use, that's a 15-18% gain over stock. As for handling, I spent $130 for a custom alignment, which *transforms* the car.
