Head gasket? DIY?

After reading air bubble trouble post a few days ago, things start to make sense on my 88 SPG (187K miles)- maybe. Car actually runs great, and I have had it on one long trip with no issues. Bought last fall, the car loses antifreeze slowly, but does not leak. I replaced radiator, therm, expansion tank and cap, and all hoses. I never bled the coolant system. Both before and after all this, the expansion tank seems to pressurize quickly, and depressurize slowly - you can hear the cap hissing. There is ever-so-slight crap in the coolant that I assumed was a result of not fulshing the system well.
A pinhole leak in the head gasket would cause both the presuure/de-pressure thing, and the slight coolant crap, right? Any other likely explanations?
I am willing to replace the gasket myself (3rd year grad student, no money, but I do have tools and a dry garage), but am concerned that I will miss something important in the process, like warped head or cracks or whatever. Any advice or encouragement? Jeff Cunningham's site makes this sound relatively straightforward as long as you are careful and patient, but this would be the biggest repair I have ever made to any car. How much should I expect the local independent to charge? (Good, saab-saavy shop, excellent work but never cheap).
