Clean & degrease everything (note: be very careful of what you use. I used an "orange" product from Home Depot that removed paint...); motor mounts, if they're not already done (esp. the left one). If you have the time, "detail" the engine bay as far as you want to. It'll make things easier in the long run.
thoroughly clean out the tunnels where the driveshafts go through, the entire area around the steering rack, the "wings" (under & around the battery & air cleaner forward to the bumper & back to the wheel well). Also clean the area near & under the brake master & booster. Also inspect for rust. If you have any desire to change your horns, now is the time.
Clutch line & master (if equipped);
rubber boot that e-brake cables and shifter go through - over time these tear. You'll have to pull the cables from the calipers, but it's worth it (don't forget to cross them when you put them back!).
Just think clean & neat, and that you want to keep it ANOTHER 30 years...
And if you really want to spiff up the engine bay, take off the heat shield on the firewall & have it bead blasted & ceramic coated or plated...
