First off, my sincerest condolences for your misfortune, Justin. I am extremely pleased to know that you are well. It always helps to know that something you love so much made the ultimate sacrifice and performed as expected in the worst situation. I know that probably sounds silly since "it's just a car", but I'm sure everyone on here can relate. I think we all share in your pain.
I'm the guy that had the privilege of buying the 1991 SPG at the SOC this year. It is high mileage, but in extremely nice original condition. I paid $5,100 ($5,304 after the buyer's fee). The car is Talladega Red, so there were only 40 in existence in the United States in 1991. I am in the process of restoring the car to showroom quality condition and have it insured for an agreed-value of $12,000. I would recommend that you visit the NADA site linked below. They have a collector/classic car value tool and that should give you a little more weight to throw around with the insurance company. It looks like they have your SPG valued at $5,900 low retail, $7,100 average retail, and $10,100 high retail. Based on the information that you have provided, I would feel comfortable with something between average and high retail...closer to the high side, if anything.
I had an incident several years ago with my 1990 900 Turbo where a teen in a Land Rover Discovery rear-ended me on the interstate. It took a ton of work, small claims court, etc. to finally get everything resolved. Just be sure you document absolutely EVERYTHING. I wish you the absolute best of luck.
