The reason you don't use anything but brake fluid is because anything other than brake fluid has the potential to result in complete brake failure. It is just totally irresponsible to drive a car on the road that has unreliable brakes. If you need to stop for another car, a dog, or a kid in the road, what then?
Rubber products are designed to work in specific applications. Using them in the wrong application can result in the failure of rubber product and/or the contamination of the system with degraded (failed) rubber. Fuel line is different from brake line is different from vacuum line is different from coolant line, and you are not to mix them up or you put your car, yourself, and others at risk.
I think a discussion about fluid substitutions is irresponsible. The simple answer is: There aren't any. Manufacturers choose fluids based on their properties, and then design systems to contain those fluids. The wrong fluid in any system is a recipe for disaster, and positively should not be encouraged.
