O2 sensor plays a role in helping to determine fuel injector duty cycle (along with throttle position sensor, RPM reading, AMM readings, coolant temp etc.)
Its not entirely odd to see that a car would run pretty darned well when missing one of these inputs, especially when its pretty much a "result" type reading, versus an input reading (like coolant temp + AMM airflow reading + throttle position will drop into an equation, to give a duty cycle for the injectors. Afterward, the O2 sensor just monitors and gives feedback.) It all has to do with what the ECU has for a no-input condition.
If a car has "LEAN" as a no-input condition, it will tell the car the engine that its not getting enough fuel, and DUMP fuel through. In the right conditions, this can cause fire in the catalytic converter and burn the car down.
If a car has "RICH" as a no-input condition, it will back off fuel until the car basically can't run, causing a lean condition, which will start to burn up internals.
If it were me designing the ECU, I would have a no-input condition be equal to a PH of 7; not acidic, not base; right in the middle......and would rely on the rest of the sensors in the algorithm to provide the proper fueling.
Just a guess though....
