I would worry the most about rust, and then transmission, and then other repairable but costly items (more at that point in terms of valuation). rust is really the killer... pull up the carpets etc. it can hide anywhere!
in terms of the interior, you can make it tan no problem - if the seats are a mess and need recovering, do it with the seats you have. salvage the other tan stuff from a donor car. red + tan is imho the definitive c900 vert colour scheme. a true classic!
2 tone could work also. often dark grey is the colour, not black. the 2 go reasonably well. I changed the headliner in our buffalo grey sedan to a darker shade, and I think it looks better than stock... depends what you want.
