I've done this dozens of times and it's a 15-30 minute job. The only time I ever had any issues was on my last car, the power steering rack was so close to the main crank pulley that it was difficult to loop the belts over it. I solved that by loosening the center bolt on the passenger side motor mount, backing it off to the top of its travel, and using my jack to lift the engine - a half inch or so of extra clearance was all that was required.
Other wise it was just loosening the adjusters, slipping the belts on/off and re -tightening them. Never messed with the AC hoses or wiring harnesses myself. It can be very helpful to use a 2x4 as a lever to lift the alternator up while you're fitting those belts - i lean on it with one shoulder, so I can use both hands to guide the belts into position.
