You don't say what the width designation is for your 205 tires. Are they 205/60s? If so, they're going to be "taller" than the 195/60s, and you'll be going a little faster than your speedo tells you. If they're 205/55 or 205/50s, you'll be a little closer to accurate. I changed wheels on my car from the 15" wheels to some 16" racing wheels, and the 205/50-16 tires are the identical height to my old 195/60-15 set... just a little wider. Someone on here posted a really cool website link to look at tire size comparisons... you might be able to scroll back and find it, or hopefully they'll post the link again.
Congrats on your tuning and performance improvements. When you're all done, and assuming your car is mostly stock, I'd estimate you'll get somewhere around 28 mpg or so in mostly highway cruising, perhaps about 25 in town. Depending on how you drive, your tire pressure, etc., you might see over 30 mpg on the highway, but 28 is more typical, particularly with the auto tranny.
