As you probably know, the clutch is hydraulically actuated, sharing a fluid reservoir with the brake master cylinder. The master cylinder is easy to get - right by the clutch pedal on your car. Slave cylinder is harder to get at - you have to remove the transmission to get at it as sits between the transmission and flywheel. The rubber hydraulic line running between the two cylinders will also occasionally fail on these cars - leaving you stranded who know where.
The first point of maintainence that is often neglected is to refresh hydraulic fluid at regular intervals. I'm guessing the fluid in your system is an old nasty brown. This is accomplished by applying higher than atmospheric pressure to the fluid reservior and opening the bleeder nipple. Air bubbles in the system will also reduce pedal throw and make the clutch engage near the floor.
The hydraulic seals in the system will also fail occasionaly. That's just life. As removing the transmission is a nontrivial task it is best to replace everything conceivable when you take it off to replace clutch-disc/pressure-plate/throwout-bearing/oil-seal/flywheel_resurfacing...
Though time consuming, removing the transission is not a technically sophisticated task. Its mostly a matter of unbolting things that don't want to come apart.
It was my first ever car repair - it took me a summer (on an '87 9kt) I could do it now in a day. Good directions posted below are from "nines" magazine.
