Machine the head flat like David said. If there is any pitting on the block, use JB Weld to fix it. There is a procedure on thesaabsite for this. Generally, only one surface (the head) has to be perfectly flat for it to seal. Make sure you clean the block of all debris left from the old head gasket.
As for a warped head, they can be straightened but you're probably better off with a used unit.
