Going around corners will cause the crank to contact - thrash the high oil, causing aeration of the oil. Any air in the oil increases the volume of the oil air mix proportionally. 5% air can happen easily, with up to 25% possible. Some aeration occurs in normal operation. So what the dip stick says, and what is happening when the engine is running can be 2 different things.
Engine manufactures go to a lot of trouble to arrive at an oil level that is a good compromise between too high or low for all operating conditions like; accelerating, stopping, corners, hills, hot, cold, etc. Going over the max mark is too much oil, and a waste of oil. Anything between the high and low marks is acceptable as far as the manufacturer is concerned.
