Didn't work out this time using a generic "universal" part, but that's the way it goes sometimes, many other times I've been able to use less expensive parts in a car with good results. (I wouldn't cheap out on safety-related items such as front end or brake parts, but an O2 sensor seemed like a reasonable risk.)
In particular I've used inexpensive universal O2 sensors in quite a few vehicles, including older Saabs. I'll keep this generic sensor on hand as it may be "good enough" if the rear sensor quits on me, or for use in some other vehicle some time.
The P0125 code though really did appear to have nothing to do with reality, so I wound up wasting some time replacing a brand-new Saab OEM thermostat with a new aftermarket one (Wahler). Will keep the Saab 'stat on hand to install in a couple of years when the car is due for a new one.
Seems this car is one of the "sensitive" ones!
