I am not aware of a kit per se other than the one that was installed by Saab dealers in the late '70s. That is/was an R12 system that used a pretty common and reliable (if big and heavy) York compressor - the same one was used in many other cars, so the compressor and parts for it should be available. I am not real familiar with AC system design, but I would think that an AC shop could fabricate up the condensor, hoses, and receiver/dryer. For the inside of the car it would be nice to have the original Saab bits - that may just be a matter of searching junkyards. The biggest issue would likely be broken mounting tabs. Again, you might be able to get an AC shop to fabricate up a "generic" system for you.
I have a working original system in my 99 EMS and from a functional point of view I'm actually surprised at how well it works. Certainly keeps the car cool, doesn't seem to cause power issues when it is on, and doesn't even make the car overheat (still not sure I want to try it in the Turbo). If you want I can copy the Hemmings info on the York compressor for you and take some photos of the installed system.
