Doug may know whehter you can specifically get the '74 MC parts, but be careful with NOS seals or a whole MC at this point, I always feel like a 40 year old brand new rubber part is not the best (would you use a 40 year old tire?). I have had good luck sending an MC to White Post or one of the brake restoration places; they have all sizes of seals and can match things up, hone it, sleeve it, or whatever is necessary. With everything else you've done, I would highly recommend going with new rotors as well - I think they are ~$40 each at NAPA, I recently go rears for my EMS which should be the same as all 4 on the '74 I think. At the minimum get the old ones turned, or you will not be very happy with your new pads!
As far as the sticking pedal, I think that is definitely the MC - it has an internal spring which apparently at this point can't overcome the friction from 37 years of corrosion and gunk....
The parking brake is indeed a minature drum brake that works on the inside of the "top hat" on each front rotor. When you pull the rotors off you'll see the cute little shoes. I am not sure the adjusting routine for those, but if your shoes are dry and not worn out hopefully you can adjust the handbrake once you get your new/turned rotors back on. The procedure should be in the service manual.
