Yup, the B intake does carry coolant. The head from an '80 EMS will fit - the only difference between an EMS head and a turbo head is the cam profile. Exhaust valves are the same sodium filled type and all else is the same.Removing the head is no harder than on an 8v 900. Remove the turbo so that it's not putting strain on the manifold when you unbolt it.
When you take the cam cover off, you'll see a plate to the left of the timing chain sprocket. Use one on the bolts that secures the sprocket to the cam to securely fix the sprocket to the plate. Then you can unbolt the cam from the sprocket and remove the head without disturbing the timing chain.
However, if it is only a small external leak I'd leave things alone for now...
