Torque measures the pulling ability of your engine. Most engines with high torque produce this measurement over a narrow RPM range, usually at the lower end of the tach. This is why diesel trucks can tow a lot but have umpteen zillion gears and 'stangs are great for hole shots, but can't get to high speeds.
Remember, as you accelerate, you change RPM.
HP measures the go-fast potential for your engine. If you've seen the specs on some of the F1 cars, they produce a lot of HP, but the torque measurements are not as impressive.
Somewhere between the peak torque and HP RPMs lies the sweet spot for your engine where you have the most abililty to accelerate. For my 97 900turbo, its between 3500 and 5000 RPM
