First, for Amanda, if you're not concerned with sound quality, consider the direct-attach FM modulator. Better yet, see if a store will install it for you as a trial, or let you listen to an installation somewhere to see if you find it acceptable quality. A cassette=deck adapter is not the greatest quality either, so maybe you won't mind the modulator if you're coming from the cassette adapter.
If you want better quality, I can think of two ways. First, as Serendipity mentioned, I had suggested putting in an equalizer. This can only be done if you also put in an amp to drive all of your speakers. You connect the line-out of the head unit to the inputs in the back of the eq, and the outputs of the eq to the amp. You then have an input plug in the eq to which you can attach your mp3 player. (If you go this route, make sure the eq has an input jack before you buy it, as not all do!)
The alternative is to replace the head unit with one that has an input jack.
A workaround to the whole problem is to burn your mp3s onto CD (audio, not mp3 CDs). Some people have reported problems with playing CD-R recordings in the Saab head unit, but I've been doing it without any trouble.
