Saab must have changed the parts at various times. My 2001 mirror covers have two fasteners on each...pry up the top of the fastener (the head is sort of split) and then pull the whole fastener out. The cover will then just lift up.
For the rest of the door panel, 2 screws under the handle, 1 screw under the little round cover on the door pull, 4 screws at the bottom of the door, and a little fastener on the side at the top. There are two pop-out fasteners at the rear of the door, and one at the front, so pry the panel off at those areas. Actually this is on a convertible, so maybe the sedan is a little different?
