A small amount of overfill - Like a 1/4 to 1/2 quart is not likely to hurt anything, and is not worth the effort to drain the oil to correct.
Agree that it makes no sense at all to add oil without checking level since you have to remove the dipstick to add the oil !
Too much oil will not cause the low oil pressure light to come. This sounds like a sludge issue or a bad sending unit. If the engine is noisy and you are getting a low pressure light, do not drive the car until it is diagnosed.
