Isn't that ridge just a result of the braking surface being worn down while the outer edge of the rotor doesn't get worn (as much)? So when you get the rotors machined they will be flat.
But more likely that ridge indicates the rotors are likely worn down close to their minimum thickness anyway & the shop *should* refuse to machine them.
