The catch can isn't really a catch can, it's a air:oil separator. Oil vapor that is removed from the valve cover travels into the plastic container, where oil is removed from air. Oil returns to the sump via the little squiggly hose, and air goes back into the low side of the turbo.
I wonder if one of the big hoses or the separator is clogged (or otherwise obstructed), and pressure is building up somewhere as a result. You could try removing the big hose from the dip stick tube and valve cover (separately, in sequence) and blocking the hose off (to prevent a vacuum leak/false air) to see if the behavior changes. Wrap the hose nipples in something breathable, but something absorbent as otherwise you will have a different mess. :)
Not to cry wolf, but the two reasons this happens is that too much air pressure is present in the sump. That could be because air isn't being extracted, but it could also mean too much air is getting there... like a weak bottom end or potentially certain types of head gasket failures. I'd say this is unlikely since the car otherwise runs ok, but it's something to be aware of.
