What are symptoms of bad thermostat?

96 900SET - 105k miles - manual trans - MBC with very little boost dialed in (otherwise stock).
Dean suggested I may have a bad thermostat. It's going into the shop today but help get me smart before hand, please.
Car was running hot for about a day then blew a heater hose (lost all coolant and went just to red for about 15 seconds then stalled). Had it replaced and have had a Low Coolant alarm since. There are drips under the car. But, I cannot find a leak (the entire area around the overflow is covered with a thin film of antifreeze). Tightened all clamps I could find (none were really that loose).
So, here is what is happening:
1. Low Coolant alarm (overflow "refills" if I vent the cap)
2. Cabin heat is not nearly as hot as it used to be (but it does heat)
3. Temp gauge swings between 8 and 9 oclock (does NOT go above 9 oclock)
4. Cabin heat comes on strong intermittenly and the temp gauge swings at this time.
5. Fuel economy is poor (about 22 mpg on highway)
And (I can't imagine how this is related) since I had the hose replaced, the car has difficulty starting when cold and runs rough at idle for about a minute (hot or cold - but worse when cold).
Car got a new battery when the hose was replaced (where DID I put the radio code?!?!?!).
So, can you help me understand so I can talk intelligently to the shop? Termostat? Someone suggested maybe a head gasket (yikes!)
