Who knows what kind of fault can exist in the ECU or its wiring? It is easy to check, so just check for trouble codes. It is a 1996, which means OBD-II, which means any OBD-II reader will tell you the story. AutoZone and some other local parts stores will do it for you at no charge.
A sensor may not be outside of expected range, so ECU will throw a CEL. At the same time, a sensor may be producing wrong values and causing your driveability problems. This situation would be tough to diagnose. I would look at the engine and try to guess where the coolant was spilled. Try to deduce which sensors could be contaminated and think about which of them could cause you problems. Air temp sensor is a primary suspect, since your car seems to run poorly when cold. Go through every sensor in Haynes and think if it could be the cause.
Also make sure that you have no vacuum leaks. Check vacuum hoses and connections. Take off the engine cover and inspect the intake manifold. Try to spray a little carb cleaner around the intake manifold while the engine is running -- see if it responds in some way, indicating a vacuum leak.
