Glad to hear you've got your car looking good. Another shiny Saab on the road is always a good thing.
Clay bars remove surface contaminents, they don't affect the paint underneath. So the acid test after claying is how the car feels, not looks. If your hand glides over the paint like it was made of glass, mission accomplished. Claying is something you do only a couple times a year or when the car gets contaminated with something like paint overspray or tons of tree sap. But its a smart step to do during a big detail job.
As for waxing, you can do it whenever you feel like but at least 2-3 times a year. Now that your car looks good its easy to keep it that way. Next time you wash you can slap on another coat of Gold Class if you feel like it. The only thing to remember about Gold Class is that its not very durable so practical protection is like 4-6 weeks. So base your waxing schedule around that number and you'll be OK.
