Extrapolating from things like lathe work, machining, even wet sanding of painted surfaces, water is never used alone. Usually a surfactant (soap), wax, or oil is added to the water to provide lubrication.
Not knowing how soap will react with clay (it may break down the clay), I would stick with the instant detailer.
