I did some quick research, and found that the high-nickel content of appliance panels (series 300 steel) increases their resistance to corrosion but causes them to be non-magnetic. By comparison, stainless steel knives are made from series 400 steel which contains chromium and little or no nickel. This allows them to hold a sharp edge as well as be magnetic.
