If you keep it in the fridge the oil will not separate, but it becomes very firm and difficult to spread. However, if you pop it in the microwave for 10-15 seconds it will become creamy and smooth again. Thus the best of both worlds: no separation and easy to spread! Okay, it may not be rocket science, but I was very happy to receive the tip.
As for refrigeration, I say no need for regular peanut butter, and I'm a little skeptical of the need for natural despite what the label may say. Though I've had no problem going unrefrigerated for around one week or so. When possible, I do refrigerate for the reasons mentioned above.
That's more than I ever expected to write about peanut butter!
