I don't understand why your car is still disassembled. They should go ahead and fix everything else and all they need to do is wait for your hood to arrive and paint it and attach it. If they did this, you can even ask them to attach the old bent hood (rebent it to make sure it closes) so that you can drive around till the new one comes in.
I think you should ask them to at least start on other things so that you are not looking at 10 more working days to finish the car after the hood arrives at this shop.
BTW, who is paying for the rentals? If insurance company, than seems like they should be helping you more to get your car faster.
ps. about them taking too many business, yeah, you are probably right. They kindda got you as soon as you tow-in or give OK to do the job because first thing they do is disassemble to see more damage is there. (good thing) Once it's towed in and disassembled, it's more of work to put it together and tow to other places to get quote/give work order (bad thing) so you are to be really smart about who you bring your car to. It's really difficult and pain to do something about it once they tell you "oh, after we disassembled your car, we found a frame to be bent tiny little bit. It's small, but by law, we have to straighten this frame and it will cost you thousands of dollars". So be smart and drive/call around before you commit to a shop in the future...
