I had Gislaved Nordfrost II tires on 205/55/16 and 185/65/15 for two of my Saabs. One snowy day I swapped out the 185/55/16 and put on the 205/55/16 tires. The difference?
When the snow was deep the skinnier ones were definitely better, especially when it came to steering when the speed got higher. When the snow was not deep and the roads were just slippery, the 205/55/16 had more grip. There was a little more wear on the skinnier ones but I do not think that was the complete story.
What I took away from this? When it came to my next set of snow tires I went with skinny ones again because I do lots of highway travel and DO NOT LIKE hitting deep snow on the highway. Can you say "spinout"?
Now that I moved and I do mostly back roads and they plow well, I will go 205/55/16 next time. Any wider would just be weird.
