...That room will have both heat and humidity. Tile is an excellent choice. It is faster easier and more efficient to use a 'cement board' backing that is screwed into, glued onto, or hilty rivited into it. The cement board is not that expensive, resists water, and is smooth. Then you just apply your mud, apply the tiles, wait for the tiles to dry, and then grout and finish. This will create a durable and long lasting wall covering that should last forever. Use a grout that IS NOT WHITE. Use tiles that are grayish or not white. This will allow for dirt to remain hidden until you wash the tiles.
Another choice is just to apply water sealant on the cinderblock followed by framing the room in 2x4's at 18 inch intervals and applying drywall. Place insulation in the 18 inch spaces between the wall and the drywall for heat savings. Then mud and paper the joints and paint.
