My experience:
My wife and I went in '05 with a company out of Canada called GAP Adventures.
It was very much an adventure and not much pampering, at least with this company. The boat was small, ~25 people total (including crew) and the food was really good. Our room was tiny on the bottom deck and the shower was awful.
All this being said, we had an AMAZING time. The crew was very helpful and friendly and the guide, a local, was great.
The islands were really something otherworldly. We swam and sunbathed with sea lions, swam with sea turtles, saw penquins, birds galore, iguanas and learned a great deal about the history and biology of the islands.
We didn't do any diving but snorkeled a lot.
