Went in December (third time on Kauai). In no particular order... 1) Drive up Waimea Cyn road at least as far as the canyon lookout 2) If the weather that day is decent drive as far as the Pu'u O Kila lookout 3) Hanalei / North Shore / Tunnels Beach 4) Lighthouse at Kilauea Pt 5) Wailua Falls 6) Polihale Beach (for the views, NOT the swimming -- dangerous!) Rough dirt road to get there. 7) Hike to the first valley on Na Pali Coast from Ke'e Beach lot (end of the north shore road). Can be muddy and steep. Swim in the mountain stream and maybe hike up to the waterfall 8) Horseback riding near Princeville (we used Silver Falls company -- back country of Kauai is beautiful). Lots of fun and easy even for a beginner like me.
One general rule for swimming in Hawaii -- especially on a winter beach. If you don't see locals swimming in the water don't even think of going in. They know the water and if they're not in it's too dangerous. And even if there are locals in the water be cautious. Wear snorkeling fins or better even if you're just going for a swim so you can help kick your way out of a 'situation.' Search the net for Kauai surf reports before you set out.
