It's been a while since I had kittens (my beasties are 8 and 9 years old). They seem to do well with wet food in the morning and evening, with dry food out all the time for free feeding. Dry food is generally better, since it's more nutritionally dense than wet food and helps keep the teeth clean, but wet food has a lot of water, which is also important. Rinse out the can before tossing it in the trash, and there shouldn't be much smell.
I also leave out 2 different brands of dry food, to give them variety. Also, I figure different brands would have different levels of the various nutrients, so by having 2 brands, I'm kind of ensuring a more balanced diet. I think this might run the risk of finiky eaters, but I haven't had that problem. Some dry food comes in different flavors, so try that, too, for variety.
Caveat #1: use good quality food.
Lawyer repellant: I'm not a vet, just the housekeeping staff for a couple of cats.
