The chemical bonding between the mercury and the silver and zinc is such that neither gets a chance to oxidize, plus the fact that it cures with time to provide a substantially solid surface to react to the forces of chewing.
I read up on this a few years back - they haven't been able to show that mercury leaches out into the body, through interactions with saliva, and believe me, they have been looking. There is an article on Wiki, called Dental amalgam controversy that discusses it. A major part of the concern is about the release of mercury vapor over time, into the lungs and then bloodstream.
My dentist (went to the same school as me) prefers the composites only for the front teeth, still uses amalgam for the molars, but of course, enjoys putting in gold crowns, because they last forever.
It would depend on the aesthetic needs you have I suppose.
