Car seat: I suggest the Britax Decathlon. Wonderful seat - the straps don't twist or tangle, it is rated very safe. Comes with padding to accomodate an infant. If you're worried about the size of a rear-facing seat which can cause trouble for the front seats, the Britax Roundabout is more compact but has a lesser maximum weight limit.
Bottom line: bring the car(s) you want to fit the seats into, and try them out at the store before you buy to make sure you can put the front seats at a comfortable location. If the store won't let you try this, find a different store. I had our local police to the initial installs of car seats in our cars so I could learn the best methods. Highly recommended.
Baby monitor: We use a 27 channel Sony monitor that sells for ~$35-40. We live in an apartment building with lots of cordless phones, microwaves, etc. and it's always possible to find a clear channel. I can't commment on range since the apartment is a whopping 750 sq ft.
