When we did the kitchen 5-6 years ago we put down solid oak. The kitchen runs into the family room, which had old wall-to-wall carpeting over solid oak, so we pulled up the carpetm had the oak sanded and put a couple coats of satin finish urethane on both the fam room and kitchen.
The oak has held up very well in both areas, especially in the kitchen which as no carpeting except for a couple of small throw rugs. We have two active dogs (English Cocker Spaniel and a Corgi) and the floor has held up fine. We were concerned their nails would chew up the floor but there's been absolutely no worries. And when it's time to refinish it will sand and urethane easily.
In the rear entry and the bath we have Italian ceramic tile. It's a mottled terracotta and tan color and seems just about indestructible. It handles water, grit, sand, mud, snow, and dirt real well and still looks fine. It's been down for about 7-8 years. I need to refresh the grout in a couple of places, but the tile has proven very durable. Sealing the grout makes a big difference.
If you're worried about the floor being cold in winter, consider a radiant system. Not cheap, which is why we didn't do it. Some friends have this in their house and it's very nice. I've heard there are electric versions that are less expensive than the fluid ones but don't know anything about them.
