I think a big issue with the top speed was running on dirt. At those speeds you're getting a ton of extra friction even from a hard packed dirt surface. I know this is true in the salt at Bonneville, so I would assume it's true on dirt as well, and I'd guess held the cars back at least 10mph.
As for the Firebird, that's absolutely a 150mph+ car. It's got 275hp (much more than the Viggen) and I remember the magazine articles at the time hitting 160mph with the 6-speed manual car. I doubt they're really that heavy, but in any case weight has very little do do with top speed, especially with a long run which they certainly had. I'm guessing that car was a little down on power from new.
Probably one of my favorite US TG episodes, and definitely got the memo out on what we already know, that Saabs are a huge performance bargain.
