Like doing a 50 -75 mph uphill pass with 3 or 4 people on board. Getting around a truck on a rural road with short passing zones.
The peak torque (and HP) is still MUCH lower than the 9-5's and the Encore is only slightly lighter. It may feel zippy but real world it will be slower. It's no doubt fine for everyday, it's just that when you want power it's nice to have it. My wife might be OK with it. I wouldn't. Maybe someone will come up with a chip for it.
Are you getting the 40 mpg at a steady 70-75?
I've never felt the 5 speed auto trans in the 9-5 was lacking. It shifts fine and doesn't hunt. The Encore may be OK, but It's a big step down in power. And as we keep cars a long time, I'm not convinced it could go 200K+ miles like my 9K and 9-3 have. Or still be doing fine at 10 years and 120K like the 9-3.
