Do yourself a favor and take all the stuff you regularly expect you'll need to load into the car to the dealership & try it out; car & booster seats (obviously you don't need to strap them in, just place them), stroller(s), diaper bag, proxies for grocery bags, etc. And maybe your oldest to better judge the 3rd row access.
Dealerships get these types of requests all the time. My parents did it when shopping for my sister's high school car. My dad said the salesman seemed completely unfazed when he brought in my sister & her cello case and had her try (and yes a cello case fits into the truck of a 1991 Sentra).
I understand your desire to have multiple rows to separate the kids (I have 3.. and all in car seats at one time), and a generally lower price & economy of a smaller vehicle... but don't be surprised if you wind up with a full minivan. We did (and I was not happy with the cost). Other smaller options would be a used Mazda MPV or a first gen Odyssey.
