One unlikely possibility. Old contaminated brake fluid is much more temp sensitive than fresh fluid. You said you overhauled the hydraulics but if you used fluid from a bottle that had been sitting around for years even if sealed it can go bad. Ive read that it will absorb moisture right through the plastic bottle. It could be the harder gears are normally borderline ok but when it gets hot there is not enough clutch action.
