Hmm, not sure what you are seeing here. The two lines to the rear brakes come through a grommet on the firewall just to the right of the accel pedal and then run along the floor in a channel. Once you've undone the coupling nuts you should be able to slide them out endways under that transverse center post. If you don't really enjoy flaring/bending tubing you might want to farm out this part of the job to a brake shop and let THEM worry about it.
Brake and clutch fluid are NOT on the same line unless someone has done something really strange to your car. The place where you put in the fluid is just a remote reservoir -- there's a hose that runs down to the actual master cylinder, which for easy maintenance is conveniently located 'way down in the darkest, oiliest, slimiest, most inaccessible portion of the engine compartment. There are TWO master cylinders, of course, for the brakes and clutch, and there should be TWO remote reservoirs -- front one for the brakes, rear one for the clutch. They take the same fluid, so I suppose it's possible some previous home engineer re-plumbed them to fill out of the same reservoir, but like I said that would be a bit peculiar...
(PS -- all these observations apply to a III. If you've got a two-stroke II or a V4, all bets are off as I have no idea whether these might have had a common reservoir or not.)
