I have tried both on the same car, and I would say you won't see any performance increase with the 34ICH compared to a *good* FooMooCow -- but since the 34ICH is current and has lots of readily available parts sources, it's a lot easier to KEEP it up to snuff.
Still, if you must, the switch is straightforward, although "tinkery." As da SaabDude says, you'll need to fake together an air cleaner solution (hole in the stock air cleaner is the right size to sit on a 34ICH, but you have to make your own hold-down -- I cut some tabs out of brass, riveted them onto the bottom of the air cleaner housing, and clamped them around the throat of the carb with a hose clamp.) Not too tough.
What may be tougher is coming up with a throttle shaft arm -- carb doesn't come with one that will work with a Sonett, so you either have to make or fake. Don't be surprised if you have to fiddle with the jets, too-- sumthin in the range of 165 to 180 ought to be about right for the main jet if your engine is basically stock.
Overall if there isn't anything really wrong with your MooCow, I would say do NOT replace it just to replace it. Wait until it requires a rebuild or the throttle shaft holes wear out, and THEN it's time to contemplate the Weber alternative.
