My approach would be to first change the oil, then remove the plugs and squirt in some mystery oil, let it set a day or so and then try turning the engine over with the fan by hand. You may need to tighten or hold tension on the fan belt while you turn it. If it has been in a garage it probably will turn over real easy. If it has been stored outside it may have rust issues in the cylinders. If it turns over easily, give it a few complete turns, then if your feeling brave, hook up the battery, disconect the fuel line and plug it below the fuel pump, and with the plugs still out turn the engine over with the starter. If you want to pre oil it by spinning the oil pump thru the distributor, that's a good thing. If all goes well, reinstall the plugs, tune it up, rebuild the carb, the accell pump diaphram will be rotten, replace all the fuel hoses, new fuel pump, and use a gravity feed gas can to start the car. The fuel tank will have junk in it that will keep plugging the fuel system if you don't take it out and have it cleaned. Your clutch problem will most likely be the hydraulics, you will need to replace or rebuild the clutch master and slave cylinders, and you will have to have the master cylinder, calipers, and rear cylinders replaced or rebuilt. Also you need to replace all the brake hoses. You will probably also have waterpump leakage if the system has been drained, and the clutch disc will be stuck to the flywheel which will mean breaking it loose under power or pulling the engine and replacing it. that should keep you out of trouble for a while!
